Once we arrived, we did the usual set up stuff. The park is pretty nice and empty such as many parks we've been to. We're in a beautiful area called Hiouchi which is thick with trees and brush. We'll explore a little bit tomorrow.
Sometimes I get on these kicks of creating meals in advance. In the past, I've done breakfast sandwiches, pancakes, meatloaves, burgers and probably others I'm forgetting. Tonight I made 16 enchiladas. I put about half of them in aluminum foil pans to freeze and of course some for this evening. We have a small freezer (compared to what we used to have) so I used 8X8 pans for the freezable portions. They're just ground beef 5.5 lbs, enchilada sauce, cheese and onion. I baked the ground beef last night. I prefer to bake rather than fry. I use a rack in the pan so the grease will drain through. It's healthier, cleaner, and doesn't stink up the coach. I'm smart like that.
Jim has been looking at what there is to do around here. Thus far, we're not seeing much else to do other than the giant redwoods.

The weather for the drive has been raining with spots of sun. The temperature is in the 50's, so we're thrilled!

A woman came into my store today wearing stirrup pants that were too small for her height. While she was checking out, the stirrup came off one of her feet and shot up her leg like a rubber band. She said "Oh MY!" :D
